Holy Grail of Macarons: Foie Gras Macaron at The Cake Club

Just a few weeks ago, the Juice team explored Bonifacio High Street Central, and we stumbled upon the newly-opened The Cake Club by Diamond Hotel.  



From the outside, you can see the beautifully marbled counter with the desserts encased in glass. It almost looks like a museum, with the pastries serving as the art pieces. While it may look a bit stuffy, don't get intimidated by its posh façade, the staff are very friendly and it feels very cozy inside.

The Cake Club is famous for their classic Ube Ensaymada, the Le Royale (a Valrhona chocolate mousse), and their Baked Cheesecake. Since their opening, they've added new Parisian-inspired desserts such as the Ispahan, a super sized pink macaron made with raspberries, lychee, and rose essence; the Mont Blanc, a cake made of fresh chestnut paste, rum-soaked prunes atop an almond tart; and the St. Honore Ube, a cake made of puff pastry and luscious ube ganache.

If it's too hot outside and you're craving for something to cool you down, Cake Club has ice cream versions of their desserts as well. Try some unusually flavored, Asian-inspired ice cream such as coconut-palm sugar, taro and jackfruit, and red bean.



You'd think all these treats were enough to entice us but there was one item on their menu that we had never seen before, and intrigued us more than all the rest, the Foie Gras Macaron (P150). A macaron with a slightly sweet crisp shell, porcini mushroom bits, and a delicious chunk of foie gras sandwiched right in the middle. It's love at first bite. If you like the sweet and savory combo, this is the a must-try. It's the ultimate party in your mouth.
